Reader Voices: Serving, cooking shows love


This time, it started when my husband pulled sausage patties out of the freezer. OK. Fry up a little sausage, scramble some eggs. That's not too bad. Twelve minutes, right? I went to read the Sunday paper, then took a shower.


I was also poking fun at my own cooking, which never seemed necessary until I found out why he turned up his nose at my white- rice-and-meat-sauce-made-with-canned-soup dinners.An hour later, the remains of two dozen oranges were in the sink. Juice glasses had been located from some archived cupboard, rinsed and set on the table. Peppers, ham and onions had been diced and sauteed and were awaiting their next assignment. The sausage patties were keeping up their tans in the oven. No egg had yet been cracked. My husband was busy -- focused. He's a great cook, but sometimes I want him for something else.I can tell that the food he cooks tastes better than most food. He can chop spinach so small we don't recognize it in the creamy bacon-flavored dish he serves. Frankly, though, I don't fret when the butter didn't brown exactly right. Paul's taste buds, I believe, have their own little taste buds.Many meals are served after the children are weeping or sleeping. When one of my birthday dinners was ready, Paul had to come into the bedroom and wake me up for it. He seldom repeats a meal unless I specifically mention I like it. The man hungers for variety. If he cooked chicken using seven steps and ten ingredients, he will be sure to use eight different steps and 12 new ingredients next time. Frequently, I beg him: let's do something simple. He nods, then proceeds with pumpkin soup with chilled, marinated, seasoned pears, anyway. And that's just the appetizer.And no vegetable comes without a sauce, complement, seasoning or twist. Or combination of the above. No meat is ever just browned with salt and pepper. No pan is left behind. Every meal has several dishes. Every dish has several ingredients. Every ingredient has been through several processes. Kits, cats, sacks, and wives -- how long until we eat?Nevertheless, it is sick and wrong to be mad at a husband for cooking too much. I know that. I haven't checked with Miss Manners, but it is probably also rude. So, I tried a light touch. "You just want to make sure we have one good meal this week, right?" I asked. I could say this because he was catching a plane for a week-long business trip.To be fair, I benefit. When I wanted to try a diet that forbade most of the things I commonly ate -- such as potatoes, corn, carrots and sugar, Paul found five hundred ways to cook the items left ON the list to cut down on the boredom. I like chocolate? My birthday cake is made with the most expensive, richest chocolate available, and not from any store I ever heard of. I like pepper? Pepper steak with the biggest chunks of pepper and salt I ever saw, like pepper and salt ore. My mom makes the world's best pies? He learns to replicate her crust. Whole grains are better for us? Soon, he is making our own more nutritious pasta.Paul knows every herb and all their family members. He tosses cinnamon into Mexican food and adorns perfectly good casseroles with things with shells and legs. And all one-hundred-percent correctly. When Paul says, "Dinner's ready -- I just have to do vegetables," it does NOT mean we will be eating in five minutes. Paul cooks vegetables I never realized weren't weeds. There has to be at least one cruciferous and one deeply-colored at every meal. Data Loggers: The Way To Monitor A Freezer Or Cooler�s Temperature


Data loggers are devices that sample temperature and/or humidity at regular intervals and then store it. The older models used paper and pencil as a storage method, but modern data loggers send the information they gathered directly to a computer.


Data loggers are absolutely necessary in professional freezers. The standard thermometer inside the freezer shows you only the present temperature. You need data loggers to check if there were any temperature fluctuations when no one was looking.ThermaViewerThere are only two problems with data loggers that limit its usefulness. Safe Food Handling For The Holidays


Did you know that the turkey you thawed on the kitchen counter, instead of in the fridge, could now contain bacteria levels high enough to harm human life, even though you can�t see, smell, or taste it?


When handling raw meat, wash your hands before and after. Also, wash counters or plates you plan to reuse in the preparation process if they have had raw meat on them, as they will also contain harmful levels of bacteria.It is important not to keep the thermometer inside the oven with the bird as it could be affected by the oven�s hot air and provide a false reading.Getting too much sun or being careless around an outside grill can result in summer burns. For minor first degree burns caused by brief contact with a hot object, water or steam, and sunburn, cool the skin by first holding it under running water, then apply a cold pack to numb the pain. If blistering occurs (second or third degree burns) seek medical help.Defrosting should be done in the refrigerator or in a sink full of water, changing the water about every 45 minutes. A refrigerator allows the meat to defrost in a controlled atmosphere, slowing down the growth of bacteria. Never defrost your meat on top of the counter at room temperature. This can quickly become a bacteria breeding ground. The growth rate of bacteria multiplies rapidly between 40F (4C) and 140F (60C).9. If you are going to freeze meat, seafood or poultry, enclose it in freezer wrap and freeze as soon as possible after bringing it home. Store eggs in the refrigerator, preferably in their cartons, as it provides protection and prevents moisture loss through the shell.Storing VegetablesCold treatment for night sweats.Make sure you have at least one or two cold packs in your freezer for summer first-aid. 10 Simple Ways To Safely Store Food


Storing foods can present its own set of problems. And different types of foods have different storage requirements to prevent bacteria from setting in. Here's some tips to protect your family and yourself.


Refrigerated leftovers should be eaten within a couple of days, which includes turkey gravy, fish, and eggs. Meat casseroles and pies, rice, potatoes, and cooked noodles will last 2 to 3 days, while cooked meat, chicken, turkey, turkey stuffing, and many soups may last up to 4 days before bacteria levels reach critical points.3. Apples and berries should always be kept in the refrigerator for maximum crispness. Summer stone fruits and melons should sit at room temperature until they are ripe, then go into the refrigerator. Grapes & fruits that are not yet fully ripe can be left in a fruit bowl in the kitchen.Cooked food must be refrigerated within 2 hours, which means that you need to plan your meal so that it can be eaten shortly after being cooked.Even pets can suffer in the summer heat. Keeping them cool can be tricky. An ice pack wrapped in a towel or beneath a thin blanket might do the trick if they decide to snooze on top of it. Ice cubes are a cool treat that some animals enjoy. There are also commercial products made specifically for horses to ice their legs down after a ride. Special caution should be taken to never use a product containing toxins or one that might easily break, endangering a pet if they decide it would be more fun to play with the ice pack than lay on it.Storing Dairy ProductsWhile beefsteak can be cooked to varying degrees of redness, turkey must be completely cooked. At the innermost part of the thigh, the temperature must reach 180F (82C) for a stuffed turkey and 170F (77C) unstuffed. Stuffing in the cavity should read 165F (74C). Cooking times vary with the weight of the bird.Once meat has been thawed it must be either cooked immediately or placed in the refrigerator and then cooked within 24 hours. Never refreeze meat. Most meats and poultries only have a safe fridge life of 2 days, whether stored after thawing or purchased fresh.10. Do not allow pet foods to come into contact with human foods. Pantry items (canned foods, cereals, etc.) should be stored in a dark place like in a cupboard or pantry. Keep oils out of direct light.When buying raw meat, keep juices, which may contain bacteria, from contaminating your hands or anything in your grocery cart. Plastic bags work great for this purpose.2. Store vegetables in the refrigerator crisper in plastic bags to prevent loss of moisture and nutritional values. However, eggplant and capsicums should be stored open in the crisper as they sweat if stored in plastic bags. Put mushrooms in a paper bag (not in a plastic bag) before placing them in the crisper.Storing Other Products6. Pack all your frozen foods together in an insulated container to keep them frozen until you get home. If foods defrost on the way home and you re-freeze them in a domestic freezer, large ice crystals will form and can rupture cell membranes in the food allowing nutrients to escape. Keep frozen foods frozen to maintain quality, as bacteria will begin to multiply when the food is thawed.If you plan on storing your meat for 2 to 3 months in the freezer, make sure you buy some freezer proof wrap. The wrap that the store uses is designed to allow air into the meat product and is, therefore, not good for freezing. This is because beef products turn from a purple color to a bright red when exposed to air, making them look fresh, but if left too long will promote bacteria growth.During the hot summer months, heat exhaustion and heat stroke can be a problem. Symptoms of exhaustion can include dizziness, weakness, a feeling of nausea, excessive sweating and a shallow, quick pulse. With more serious heat stroke, the skin is hot and dry, and mental confusion can occur along with a loss of consciousness. Cold packs can be used to keep the body cool in excessive temperatures, helping to prevent heat exhaustion. Many athletes cool down after a summer event with an icy cold pack on the back of their necks. If symptoms are present, ice packs along with hydration can be used to lower the body temperature to a safe level. Easy Baked Alaska


We lived in Alaska for over 12 years and never had a baked Alaska. A baked Alaska was a mysterious dessert served somewhere in the "lower 48." It seemed strange that you could bake a cake with ice cream in the center.


4. Bake for three minutes or until the meringue starts to brown. Slice and serve immediately or return to the freezer to serve later.The ice cream and the cake can be any flavors of your choosing. You can tint the egg whites with food coloring but our favorite is chocolate cake with strawberry ice cream covered with a layer of pure white, vanilla ice cream.Baker's notes: You will need to get your sheet cake out of the pan without it breaking. Lining the pan with parchment paper and then lifting the cake from the pan by grasping the edges of the parchment paper is the easiest way to do so. Broccoli can be stored in the freezer for up to 10 months. Broccoli doesn�t store very well after it�s cooked, it will probably break apart when it is reheated. If you do want to store cooked broccoli anyway, steam it until tender and store in a plastic bag.3/4 cup granulated sugarThings like cranberry sauce or relish can be stored in your refrigerator for a few days. You may want to cut up onions, celery, and any like items and store them in plastic ware to save time on Thanksgiving morning.Easy Baked Alaska Recipe1. To make the meringue, place the egg whites in a stainless steel or glass bowl. Add the cream of tartar and the vanilla. Beat the mixture until soft peaks form. Drizzle in the sugar while continuing to beat until stiff peaks form.2. Lay the cake on an oven-proof platter. Cut the ice cream into blocks and stack them on the cake.

Consider the number of people you will be entertaining and if you have children on your guest list, try to plan a couple of special dishes or treats especially for them.Another way of storing broccoli is to cut off an inch or so from the ends of the stalks, rinse the bunch in cold water and put it upright in a cold water filled bowl, just like flowers in a vase. Cover the bowl with a plastic bag and refrigerate it.The Week of Thanksgiving:If you will be cooking turkey, decide upon fresh, frozen, or smoked. Make sure you have room in your refrigerator and oven. You should plan on one to one 1/2 pounds per person and even a bit larger if you want plenty of leftovers.3. With a spatula, spread the meringue on the cake and ice cream, completely sealing both from the heat. The meringue will act as insulation from the heat. Imagine a cake piled high with ice cream and then covered with meringue. To serve, slice the cake showing the cake, ice cream, and meringue in layers.A couple of days prior to Thanksgiving you can prepare a few items in advance to save time on the big day.The ice cream should be frozen rock hard and the cake completely cooled.A baked Alaska is a simple concept? a block of ice cream set on a layer of cake and then covered with meringue. The meringue acts as insulation allowing you to stick the whole concoction in the oven to brown the meringue. You then place the dessert in the freezer to freeze rock hard before serving.For a successful baked Alaska:- Don't get it too big. If your baked Alaska is too large, it's unwieldy and hard to slice and serve. For a party, it's better to build several smaller desserts than one large. Remember that you'll add about an inch of meringue on all sides to your cake and ice cream interior.

With some advance planning and preparation, Thanksgiving can be a stress-free (almost) occasion and you will have plenty of time to enjoy the company of friends and family.

Easy Cooking


Save time and money. It seems to be the cry in every household today. It makes sense. We begin to look at where we can save time and money, one of the places that we sometimes forget to look is in the kitchen. Cooking takes both time and money. What if we could transition over to easy cooking? What if we had quick and easy recipes that would be easy recipes for dinner and easy on the budget as well? To me, that is really appealing.


Parsley, parsnips, salsifyStrong coffee. Prepare coffee by your favorite method, using 1/2 cup ground coffee and 4-2/3 cups water. Makes about 4 cups. Frozen CappuccinoAnother tool we get more out of is the food processor. Several times a year, I will take two entire days to cook. I pull out the food processor and slice, dice and chop. I put together healthy easy recipes, bag them, and put them in the freezer. I do a month�s worth of cooking all at one time. Each night for the next month, I can just pull an easy cooking recipe out of the freezer and it�s hot and on the table in about 20 minutes.No, this is not as fast as serving from the crock pot. It does take some planning. For a few weeks prior to my cooking adventure, I know what I need to buy in terms of meats and vegetables. I shop every sale. When my days of cooking arrive, I am stocked up with everything I need and I planned it, got it on sale. I take my food processor and go to town. There is no more day to day wondering of what to cook and by planning out my month worth of meals, I save time every day and have saved money at the store. My grocery shopping for a month is mostly bread, milk, and eggs.We now often use our crock pot for dinner. Crock pot cooking is easy cooking. Yes, I do have a recipe book. We like the crock pot cooking recipe book we offer for sale on our website, (see the resource box). We also like to experiment and try new cooking ideas. The best part of using the crock pot is the time savings we get and the fact that it makes for easy dinner recipes. We throw it together in the morning. If we are cooking with kids, my son would take basketball shots with stuff that goes in the pot (fun but sometimes messy). When we get home, we set the table and eat. Hopefully there are some cooking ideas you can use, too.The other thing we do to make easy cooking a reality is limit what goes into a meal. What do I mean by that? We almost always use quick and easy recipes that have few ingredients. My personal cooking book includes a lot of recipes I have acquired over the years and then simplified by reworking the recipes until they only have four five ingredients. The fewer ingredients I have to worry about, the more easy dinner recipes I collect. She did, and the soil began to revive. In cold-winter climates we'd do the strewing in early spring, in a place where we'd later be transplanting tender plants such as peppers and tomatoes. This would give the casual cover crop a chance to grow enough to be worth spading under.Shortly before serving, let cubes stand at room temperature 10 to 15 minutes, then place in a food processor and whirl to make a smooth slush (or beat slowly with an electric mixer, gradually increasing to high speed as mixture turns into a smooth slush). Serve as a slush, or cover and freeze until firm enough to scoop. Top each serving with cream and nutmeg. Coffee slush … stow in the freezer


These frozen desserts will delight coffee lovers. Strong coffee is frozen, then beaten until slushy. If milk is added, the result is frozen cappuccino. Coffee Snow 4 cups hot strong coffee (directions follow) 1/2 cup sugar 1/4 cup coffee-flavored liqueur (optional) About 1/2 cup whipping cream, softly whipped Ground nutmeg or cocoa
